Chef Charlie Palmer

Christopher Davies sat down with Chef Charlie Palmer on the eve of his press preview for his latest restaurant District Meats in Denver. Chef Palmer is famous for his fine dining restaurants such as the eponymous Aureole in Las Vegas. He explains what makes District Meats wallet friendly menu an ideal fit for Denver.

Chef Palmer's new restaurant is focused on secondary meats, specialty cuts an quality ingredients. In this interview he explains his philosophy for this concept, the wine and drinks program, plus shares his thoughts on what to keep in your home kitchen.

Axelle Araud studied Agronomy Engineering and graduated with a degree in Viticulture and Winemaking in Montpellier, France.

After several experiences abroad (USA at the Domaine Chandon California and Australia in the Yarra Valley) and a rich experience at Château Cheval Blanc in the Bordeaux region in France, Axelle returned to Champagne as a Production Manager.

She joined Moët & Chandon in 2010 as a Winemaker specialized in wine communication, bringing a feminine touch to the team of winemakers.

Nimród Kovács is a former cable television executive who was born in Hungary. He lived for 25 years in the United States, before returning to his
native land. Since 2000, Mr. Kovács has been a forerunner in the rebirth of the Hungarian wine industry. He is now launching his wines for distribution in the US. Listen to our interview during his triumphant visit to Denver.

Situated on the historic Verőszala Street in Eger Hungary, Kovács Nimród Winery is nestled among the oldest cellars in the city, dating back to the 18th century. At that time, cellars existed all around the city of Eger, protected by the city's fortress. Traditionally, wine-press houses were erected above their respective cellars to facilitate on-site processing of the grapes, as is with Kovács Nimród Winery. The winery currently produces approximately 60,000 bottles (5,000 cases) annually.
